Oat, Apple, and Carrot Cake

Here’s a wholesome and delicious Oat, Apple, and Carrot Cake recipe perfect for breakfast, snack time, or a healthier dessert! It’s moist, naturally sweetened with fruits, and packed with fiber.


🥕🍏 Oat, Apple & Carrot Cake Recipe

✅ Ingredients

Dry Ingredients:

  • 1 ½ cups rolled oats (can blend to flour or leave whole for texture)

  • 1 cup whole wheat flour (or all-purpose)

  • 1 ½ tsp baking powder

  • ½ tsp baking soda

  • 1 tsp ground cinnamon

  • ½ tsp ground nutmeg (optional)

  • ¼ tsp salt

Wet Ingredients:

  • 2 eggs (or flax eggs for vegan)

  • ⅓ cup maple syrup or honey

  • ½ cup plain Greek yogurt (or plant-based yogurt)

  • ⅓ cup vegetable oil or melted coconut oil

  • 1 tsp vanilla extract

Fruits & Veggies:

  • 1 cup grated carrot (about 2 medium)

  • 1 cup grated apple (about 1 large, skin on, excess juice drained)

  • ⅓ cup raisins or chopped nuts (optional)


🧁 Instructions

  1. Preheat oven to 350°F (175°C). Grease or line an 8×8 inch square pan or loaf pan.

  2. Mix dry ingredients in a large bowl: oats, flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

  3. In another bowl, whisk wet ingredients: eggs, maple syrup, yogurt, oil, and vanilla until smooth.

  4. Add wet to dry, mixing gently until just combined.

  5. Fold in grated carrot, apple, and raisins/nuts.

  6. Pour the batter into the prepared pan and smooth the top.

  7. Bake for 35–45 minutes, or until a toothpick inserted in the center comes out clean.

  8. Cool completely in the pan before slicing. Store in an airtight container for up to 5 days or freeze for up to 2 months.


✨ Optional Toppings:

  • A light cream cheese frosting

  • Greek yogurt drizzle with a touch of honey

  • Dusting of powdered sugar
