Weight Watchers Mexican Pizza (Taco Bell‑Style) – Detailed Recipe

Ingredients (makes 4 servings):

  • Protein

    • ½ lb (≈ 225 g) 99% fat‑free ground turkey breast or 96% lean ground beef – both are zero‑point protein

  • Seasoning

    • 2 tsp taco seasoning

    • ¼ cup (60 ml) water

  • Refried beans

    • 1 cup fat‑free refried beans

  • Cheese

    • 1 cup reduced‑fat Mexican cheese, shredded

  • Sauce

    • ½ cup Taco Bell mild sauce (available in many grocery stores)

  • Shells

    • 8 corn tostada shells (check your item’s point value; the recipe uses ones that were 13 points for all eight)

  • Optional toppings

    • Green onions, chopped tomatoes, fat‑free sour cream, olives (add points if necessary)

Directions:

  1. Cook the meat
    Brown the turkey or beef in a skillet. Drain excess fat, then stir in taco seasoning and water. Simmer for 3–4 minutes

  2. Warm the beans

  3. Assemble pizzas (repeat for 4):

    • Place one tostada shell on a baking sheet.

    • Layer with ½ cup refried beans.

  5. Broil
