πŸ“ Ingredients (for 2 servings)

  • Bread slices – 2 (sourdough, multigrain, or whole wheat work best)

  • Avocado – 1 large, ripe

  • Eggs – 2 (for sunny-side-up)

  • Butter or olive oil – 2 tsp

  • Lemon juice – 1 tsp

  • Salt – Β½ tsp (or to taste)

  • Black pepper – Β½ tsp, freshly ground

  • Red chili flakes – ΒΌ tsp (optional)

  • Fresh herbs (optional) – parsley, coriander, or chives for garnish


🍳 Instructions

1. Toast the Bread

  • Toast bread slices until golden and crispy in a toaster or on a pan with a little butter.

2. Prepare the Avocado Spread

  1. Cut the avocado, remove the seed, and scoop the flesh into a bowl.

  2. Mash with a fork until creamy (leave it a little chunky if you like texture).

  3. Mix in lemon juice, salt, black pepper, and chili flakes.

3. Cook the Sunny-Side-Up Egg

  1. Heat a nonstick pan on medium heat and add Β½ tsp butter or oil.

  2. Crack an egg gently into the pan.

  3. Cook uncovered for 2–3 minutes, until whites are set but yolk is still runny (don’t flip).

  4. Season with a pinch of salt and pepper.

4. Assemble the Toast

  1. Spread the creamy avocado mixture generously over each toast slice.

  2. Place a sunny-side-up egg on top of the avocado.

  3. Sprinkle with extra chili flakes, herbs, or cheese if you like.
