Yummm! 🌯✨ Smothered Burritos (also called wet burritos) are large tortillas stuffed with a hearty filling, rolled up, and baked under a blanket of flavorful sauce and melted cheese. They’re Tex-Mex comfort food at its finest!

🌯 Smothered Burritos

🛒 Ingredients

For the Filling:

  • 1 lb (450g) ground beef (or shredded chicken, pork, or beans for vegetarian)

  • 1 tbsp olive oil (if needed)

  • 1 medium onion, finely chopped

  • 3 cloves garlic, minced

  • 1 packet taco seasoning (or homemade: 1 tsp chili powder, ½ tsp cumin, ½ tsp smoked paprika, ¼ tsp oregano)

  • ½ tsp salt & black pepper (adjust to taste)

  • 1 cup refried beans (optional, for creaminess)

  • 1 cup cooked rice

  • 1 cup canned corn (drained)

  • 1 can (4 oz) diced green chilies (optional, for mild heat)

  • 1 cup shredded cheddar or Monterey Jack cheese

For the Smothering Sauce:

  • 2 tbsp butter

  • 2 tbsp all-purpose flour

  • 2 cups beef broth (or chicken broth)

  • 1 can (10 oz) red enchilada sauce (or green if you prefer)

  • ½ cup sour cream (for creaminess)

  • 1 tsp cumin

  • ½ tsp chili powder

  • Salt & pepper to taste

For Assembling:

  • 6 large flour tortillas (burrito size)

  • 1 ½ cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)

  • Fresh cilantro, sour cream, and diced tomatoes for garnish


🥘 Instructions

1. Make the Filling

  1. Heat olive oil in a skillet over medium heat.

  2. Add ground beef and cook until browned, breaking it apart. Drain excess fat.

  3. Stir in onion and garlic, cook until softened.

  4. Season with taco seasoning, salt, and pepper.

  5. Add refried beans, rice, corn, and chilies. Stir until combined and warmed through.

  6. Mix in 1 cup shredded cheese, then remove from heat.

2. Make the Smothering Sauce

  1. In a saucepan, melt butter over medium heat.

  2. Whisk in flour to make a roux, cook for 1 minute.

  3. Slowly whisk in beef broth until smooth.

  4. Stir in enchilada sauce, sour cream, cumin, chili powder, salt, and pepper.

  5. Simmer 5 minutes until slightly thickened.

3. Assemble the Burritos

  1. Preheat oven to 375°F (190°C).

  2. Lay a tortilla flat, add ½–¾ cup filling in the center, and roll tightly (fold sides in first, then roll up).

  3. Place seam-side down in a greased 9×13-inch baking dish.

  4. Repeat with remaining tortillas and filling.

4. Smother & Bake

  1. Pour the sauce generously over the burritos.

  2. Sprinkle remaining shredded cheese on top.

  3. Cover with foil and bake for 20 minutes.

  4. Remove foil and bake an additional 10 minutes, until cheese is bubbly and golden.

5. Serve

  • Garnish with cilantro, diced tomatoes, and sour cream.

  • Serve hot with salsa and guacamole on the side.

  • For a spicier kick, add jalapeños to the filling or use hot enchilada sauce.

  • Make it vegetarian by using black beans + extra veggies instead of meat.

  • For a green chile smothered burrito, swap the red enchilada sauce for green chile sauce.
