Shrimp Fried Rice

Here’s a classic, flavorful Shrimp Fried Rice recipe — quick, easy, and packed with savory goodness and fresh shrimp. Perfect for a weeknight dinner or when you want that takeout taste at home!


🍤 Shrimp Fried Rice

Ingredients:

  • 2 cups cooked and chilled white rice (preferably day-old)
  • 12 oz (340g) shrimp, peeled and deveined
  • 2 tbsp vegetable oil (or sesame oil for extra flavor)
  • 2 large eggs, beaten
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 cup frozen peas and carrots mix (thawed)
  • 3 green onions, sliced
  • 3 tbsp soy sauce (adjust to taste)
  • 1 tbsp oyster sauce (optional, for depth)
  • 1 tsp toasted sesame oil (optional)
  • Salt and pepper, to taste

🔥 Instructions:

  1. Prep the Shrimp:
    • Season shrimp lightly with salt and pepper.
  2. Cook the Shrimp:
    • Heat 1 tbsp oil in a large skillet or wok over medium-high heat.
    • Add shrimp and cook 1–2 minutes per side until pink and opaque. Remove shrimp and set aside.
  3. Scramble the Eggs:
    • In the same pan, add a little more oil if needed.
    • Pour in beaten eggs and scramble quickly until just set. Remove and set aside.
  4. Sauté Aromatics and Veggies:
    • Add remaining oil to the pan.
    • Sauté onion and garlic until fragrant and softened (2–3 minutes).
    • Add peas and carrots, cook for another 2 minutes.
  5. Add Rice and Sauces:
    • Add chilled rice, breaking up any clumps. Stir-fry for 3–4 minutes until heated through.
    • Stir in soy sauce, oyster sauce (if using), and sesame oil.
  6. Combine Everything:
    • Return shrimp and scrambled eggs to the pan.
    • Add green onions and toss everything together until well mixed and heated through.
  7. Adjust Seasoning and Serve:
    • Taste and add salt or pepper as needed.
    • Serve hot, optionally with extra soy sauce or chili sauce on the side.

🍚 Tips:

  • Use day-old rice: It’s less sticky and fries better.
  • Add veggies: Bell peppers, corn, or bean sprouts can be great additions.
  • Make it spicy: Add chopped fresh chili or a drizzle of sriracha.
