Twice-Baked Potatoes with Meat and Cheese a hearty, comforting dish that’s perfect as a main or a side. Here’s a full recipe for you:


🥔 Twice-Baked Potatoes with Meat & Cheese

🍽️ Servings: 4

⏱️ Total Time: ~1 hour 15 minutes


🧄 Ingredients:

For the Potatoes:

  • 4 large russet potatoes

  • Olive oil or butter (for skin)

  • Salt

For the Filling:

  • 1/2 lb ground beef (or ground turkey, sausage, etc.)

  • 1 small onion, finely chopped

  • 2 garlic cloves, minced

  • 1/2 cup sour cream

  • 1/4 cup milk or cream

  • 1/2 cup shredded cheddar cheese (plus more for topping)

  • 1/4 cup grated Parmesan (optional)

  • 2 green onions, chopped

  • Salt & pepper to taste

  • Paprika or smoked paprika (optional topping)


🔪 Instructions:

1. Bake the Potatoes (First Bake):

  • Preheat oven to 400°F (200°C).

  • Scrub potatoes clean, pierce with a fork a few times, rub with olive oil, and sprinkle with salt.

  • Place directly on oven rack or baking sheet. Bake for 45–60 minutes until fork-tender.

  • Let cool slightly (until you can handle them).

2. Cook the Meat Filling:

  • While potatoes bake, sauté chopped onion in a skillet with a bit of oil over medium heat until soft (about 3–4 minutes).

  • Add garlic and cook for another 30 seconds.

  • Add ground beef and cook until browned. Season with salt and pepper. Drain excess grease if needed.

3. Scoop & Mix Filling:

  • Slice off the top 1/4 of each potato (lengthwise, optional), or cut in half.

  • Carefully scoop out the insides into a bowl, leaving a 1/4-inch shell.

  • Mash the potato insides with sour cream, milk/cream, and cheeses. Fold in the cooked beef mixture and green onions. Season to taste.

4. Stuff & Bake Again (Second Bake):

  • Spoon the filling back into the potato shells. Top with more shredded cheese.

  • Sprinkle with paprika if desired.

  • Return to oven at 375°F (190°C) and bake for 15–20 minutes, until heated through and cheese is melted and bubbly.

  • Crumbled bacon

  • Jalapeños

  • Hot sauce

  • Cooked mushrooms

  • Chopped spinach


🥗 Serving Ideas:

  • Serve with a fresh salad or grilled veggies.

  • Add a dollop of sour cream or drizzle with ranch or BBQ sauce.
