✅ Ingredients:
For the Brioche Dough:

3 1/4 cups (400g) all-purpose flour

2 1/4 tsp (1 packet) active dry yeast

1/4 cup (50g) granulated sugar

1 tsp salt

3 eggs

1/2 cup (120ml) whole milk, lukewarm

10 tbsp (140g) unsalted butter, softened and cubed

1 tsp vanilla extract (optional)
For Filling (Optional):

1/2 cup ground poppy seeds
-
2 tbsp honey or sugar
-
2 tbsp milk
-
1 tsp lemon zest (optional)
For Topping:

1 egg (for egg wash)

1–2 tbsp poppy seeds
🔪 Instructions:
1. Make the Dough:

In a mixing bowl, combine flour, sugar, salt, and yeast.

Add eggs, warm milk, and vanilla. Mix until combined.

Knead (stand mixer with dough hook or by hand) for about 10 minutes, then add softened butter a few cubes at a time until fully incorporated.

Knead another 5–7 minutes until smooth, elastic, and slightly sticky.
2. First Rise:

Transfer dough to a greased bowl, cover with plastic wrap or a damp towel.

Let rise in a warm place for 1.5–2 hours, until doubled.
3. Prepare Filling (if using):

Combine poppy seeds, honey, milk, and lemon zest in a small pan over low heat. Simmer gently until thick and spreadable. Cool before using.
4. Shape the Rolls:

Punch down dough and divide into 12 equal pieces.

Option 1: Plain rolls – shape into balls, place on parchment-lined baking sheet or in a muffin tin.

Option 2: Filled rolls – flatten each piece, spoon 1 tsp of poppy filling in the center, fold and seal, then roll into balls.
5. Second Rise:

Cover and let rise for 45 minutes until puffy.
6. Bake:

Preheat oven to 350°F (175°C).

Brush tops with egg wash and sprinkle with poppy seeds.
