One Pan Baked Zucchini Cheese

Here’s a One Pan Baked Zucchini Cheese recipe that’s simple, comforting, and perfect as a side or light main. It’s low-effort, baked to golden perfection, and only needs one dish!


🧀 One Pan Baked Zucchini Cheese

Ingredients:

  • 3 medium zucchini, thinly sliced (with or without skin)

  • 1 cup shredded mozzarella (or cheddar for a sharper flavor)

  • ½ cup grated Parmesan

  • 2 large eggs

  • ⅓ cup milk or cream

  • ¼ cup breadcrumbs (optional, for topping)

  • 1 garlic clove, minced

  • ½ tsp salt

  • ¼ tsp black pepper

  • ½ tsp dried oregano or Italian seasoning

  • 1 tbsp olive oil or butter (for greasing)

Instructions:

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish or oven-safe skillet with olive oil or butter.

  2. Layer zucchini slices in the dish—overlapping is fine. Sprinkle with salt, pepper, and garlic.

  3. In a bowl, whisk together eggs, milk/cream, and oregano. Stir in the mozzarella and half the Parmesan.

  4. Pour the mixture evenly over the zucchini.

  5. Top with the remaining Parmesan and breadcrumbs (if using) for a crunchy topping.

  6. Bake uncovered for 25–30 minutes or until the top is golden and the zucchini is tender.

  7. Cool slightly before serving. Optional: garnish with fresh herbs like parsley or basil.


📝 Tips:

  • Add chopped onions or mushrooms for more depth.

  • Want it spicy? Add red pepper flakes to the egg mixture.

  • Goes great as a side with grilled meats or as a vegetarian main.
