Yummm 😋 Lemon & Garlic Chicken Bites are juicy, zesty, and perfectly garlicky — quick to make and absolutely satisfying. You can serve them as a snack, appetizer, or even over rice/pasta. Here’s the recipe in detail:


🍋🧄 Lemon & Garlic Chicken Bites

Ingredients:

  • 1 lb (450 g) boneless, skinless chicken breast or thighs (cut into bite-sized pieces)

  • 3 tbsp olive oil (or butter, for richer flavor)

  • 4 cloves garlic, minced

  • Juice & zest of 1 fresh lemon

  • ½ tsp paprika

  • ½ tsp chili flakes (optional, for a little heat)

  • ½ tsp dried oregano (or Italian seasoning)

  • ½ tsp salt (adjust to taste)

  • ½ tsp black pepper

  • 2 tbsp fresh parsley or cilantro (chopped, for garnish)

  • Lemon wedges (for serving)


Instructions:

1. Marinate the chicken:

  1. In a bowl, combine chicken pieces with 1 tbsp olive oil, lemon juice, zest, paprika, oregano, salt, and pepper.

  2. Mix well and let marinate 15–30 minutes (or overnight in the fridge for stronger flavor).

2. Cook the chicken bites:

  1. Heat 2 tbsp olive oil (or butter) in a large skillet over medium-high heat.

  2. Add chicken bites in a single layer (don’t overcrowd).

  3. Cook for 2–3 minutes per side until golden brown and fully cooked (internal temp: 165°F / 74°C).

  4. Add minced garlic in the last minute of cooking so it doesn’t burn. Toss well.

3. Finish with lemony goodness:

  1. Squeeze extra lemon juice over the chicken while still hot.

  2. Sprinkle with fresh parsley for freshness.

4. Serve:

  • Plate up with lemon wedges.

  • Perfect with rice, mashed potatoes, pasta, or even inside wraps and salads.

  • Add a splash of white wine or chicken broth after cooking for a light pan sauce.

  • Toss in steamed broccoli or bell peppers for a one-pan meal.

  • For extra crispiness: coat chicken bites lightly in cornstarch before frying.

  • Make it spicy: add more chili flakes or a dash of hot sauce at the end.
