Honey Mustard Chicken with Roasted Asparagus and Cheese

Honey Mustard Chicken with Roasted Asparagus and Cheese juicy chicken coated in a sweet and tangy honey mustard glaze, paired with perfectly roasted asparagus topped with melted cheese. It’s elegant enough for guests and easy enough for weeknights.


🍯 Honey Mustard Chicken with Roasted Asparagus and Cheese

Ingredients:

For the Chicken:

  • 4 boneless, skinless chicken breasts or thighs
  • Salt and pepper, to taste
  • 1 tbsp olive oil (for searing)

Honey Mustard Sauce:

  • 3 tbsp Dijon mustard
  • 2 tbsp honey
  • 1 tbsp whole-grain mustard (optional, for texture)
  • 1 tbsp olive oil or melted butter
  • 2 cloves garlic, minced
  • 1 tsp lemon juice or apple cider vinegar
  • Pinch of salt and black pepper

For the Roasted Asparagus:

  • 1 bunch of fresh asparagus, trimmed
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • ½ cup shredded cheese (cheddar, mozzarella, parmesan, or a mix)

🔥 Instructions:

1. Preheat Oven:

  • Set oven to 400°F (200°C).

2. Make Honey Mustard Sauce:

  • In a bowl, whisk together Dijon mustard, honey, whole-grain mustard, olive oil, garlic, lemon juice, salt, and pepper.

3. Prepare Chicken:

  • Pat chicken dry and season both sides with salt and pepper.
  • Heat 1 tbsp oil in a skillet over medium-high heat. Sear chicken 2–3 minutes per side until golden (it won’t be fully cooked yet).
  • Transfer chicken to a baking dish or sheet pan. Brush generously with honey mustard sauce.

4. Prepare Asparagus:

  • On the same pan (or a separate one), toss asparagus with olive oil, salt, and pepper.
  • Arrange next to the chicken, or use a separate dish if needed.

5. Bake:

  • Bake chicken and asparagus for 15–20 minutes, until the chicken reaches 165°F (74°C) internal temperature.
  • In the last 5 minutes, sprinkle shredded cheese over the asparagus and return to the oven until melted and bubbly.

6. Serve:

  • Plate the chicken with the cheesy roasted asparagus.
  • Spoon any extra sauce from the pan over the chicken.

🍽️ Optional Add-Ons:

  • Add cooked rice, quinoa, or mashed potatoes for a heartier meal.
  • Sprinkle fresh herbs (parsley or thyme) over everything before serving for a fresh touch.
