Here’s a simple and delicious English Muffin Breakfast Pizza recipe perfect for a quick morning meal!


🥯 English Muffin Breakfast Pizza

🍳 Cook Time: 10 min

🍽 Serves: 2 (makes 4 halves)


✅ Ingredients:

  • 2 English muffins, split in half

  • 4 large eggs

  • 1/4 cup milk (optional, for scrambled eggs)

  • 1/2 cup shredded cheese (cheddar, mozzarella, or a mix)

  • 4 slices cooked bacon or breakfast sausage, crumbled

  • 2 tablespoons pizza sauce or marinara (optional)

  • Salt and pepper, to taste

  • Optional toppings: chopped green onions, diced tomatoes, hot sauce


🔪 Instructions:

  1. Toast the English muffins until slightly crisp. Set aside.

  2. Scramble the eggs:

    • In a bowl, whisk together eggs, milk (if using), salt, and pepper.

    • Cook in a non-stick skillet over medium heat, stirring gently until just set. Remove from heat.

  3. Assemble the breakfast pizzas:

    • Optional: Spread a thin layer of pizza sauce on each toasted muffin half.

    • Spoon scrambled eggs evenly over each half.

    • Top with crumbled bacon or sausage.

    • Sprinkle cheese generously on top.

  4. Bake or broil:

    • Option 1 – Bake: Place the muffin halves on a baking sheet and bake at 400°F (200°C) for 5–7 minutes, or until cheese is melted.

    • Option 2 – Broil: Place under the broiler for 2–3 minutes, watching carefully, until cheese is bubbly and golden.

  5. Garnish and serve:

    • Add green onions, tomatoes, or hot sauce if desired.

    • Serve warm.


🍽 Variations:

  • Veggie: Add sautéed peppers, onions, or spinach.

  • Southwest: Use salsa instead of sauce, and top with avocado and cilantro.

  • Mini pizza bar: Let everyone top their own English muffin for a fun breakfast activity.
