Crispy Dry Rub Chicken Wings

Here’s a Crispy Dry Rub Chicken Wings recipe that’s packed with flavor, simple to prepare, and doesn’t require deep frying. These wings are baked (or optionally air-fried) for maximum crispiness with a smoky, savory dry rub.


🔥 Crispy Dry Rub Chicken Wings

🕒 Prep Time: 10 mins

🕒 Cook Time: 45 mins (oven) or 25 mins (air fryer)
🍽️ Servings: 4


🛒 Ingredients:

  • 2 lbs chicken wings (drumettes and flats)

  • 1 tbsp baking powder (NOT baking soda – helps crispiness)

  • 1 tsp kosher salt

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp smoked paprika

  • 1 tsp chili powder

  • 1 tsp brown sugar (optional, for slight caramelization)

  • ½ tsp black pepper

  • ½ tsp cayenne pepper (adjust to taste)

  • ½ tsp dried thyme or oregano (optional)


🍗 Instructions:

1. Prep the Wings:

  • Pat the chicken wings very dry with paper towels. This is key to crispiness.

  • Place in a large bowl.

2. Make the Dry Rub:

  • In a small bowl, mix all spices and baking powder together.

3. Coat the Wings:

  • Sprinkle the dry rub over the wings and toss until evenly coated.


🔥 Cooking Options:

🧑‍🍳 Oven Method:

  1. Preheat oven to 425°F (218°C).

  2. Place wings on a wire rack set over a baking sheet (line the sheet with foil for easy cleanup).

  3. Bake for 40–45 minutes, flipping halfway, until golden brown and crispy.

🍃 Air Fryer Method:

  1. Preheat air fryer to 400°F (200°C).

  2. Place wings in a single layer (work in batches if needed).

  3. Cook for 24–26 minutes, flipping halfway.


🌿 Optional Garnish:

  • Fresh chopped parsley

  • Lime or lemon wedges

  • Serve with ranch, blue cheese dressing, or hot sauce on the side
