Chicken Scampi Creamy Garlic Rice

Here’s a delicious and creamy Chicken Scampi with Garlic Rice recipe a flavorful twist that combines juicy chicken with buttery garlic and creamy rice. It’s rich, comforting, and perfect for a weeknight dinner or date night.


🍗 Chicken Scampi with Creamy Garlic Rice

📝 Ingredients

For the Chicken Scampi:

  • 1 lb boneless, skinless chicken breasts (thinly sliced or cut into strips)

  • 3 tbsp olive oil

  • 3 tbsp butter

  • 4 garlic cloves, minced

  • ½ tsp crushed red pepper flakes (optional)

  • Juice of 1 lemon (about 2 tbsp)

  • ½ cup white wine (or chicken broth)

  • ¼ cup grated Parmesan cheese

  • Salt and black pepper, to taste

  • 2 tbsp chopped fresh parsley (optional)

For the Creamy Garlic Rice:

  • 1 tbsp butter

  • 3 garlic cloves, minced

  • 1 cup long grain white rice (or jasmine rice)

  • 2¼ cups chicken broth

  • ½ cup heavy cream

  • ½ cup Parmesan cheese

  • Salt and pepper, to taste


👩‍🍳 Instructions

Step 1: Make the Creamy Garlic Rice

  1. In a medium saucepan, melt 1 tbsp butter over medium heat.

  2. Add minced garlic and sauté for 1 minute until fragrant (don’t brown it).

  3. Stir in the rice and toast for 1–2 minutes.

  4. Add chicken broth and bring to a boil.

  5. Reduce heat to low, cover, and simmer for 15–18 minutes or until rice is tender and liquid is absorbed.

  6. Stir in heavy cream and Parmesan. Season with salt and pepper. Cover and keep warm.

Step 2: Cook the Chicken Scampi

  1. Heat olive oil and butter in a large skillet over medium-high heat.

  2. Season chicken with salt and pepper, then add to the skillet. Sauté for 4–6 minutes until golden and cooked through.

  3. Add minced garlic and red pepper flakes. Cook for 1 minute.

  4. Pour in white wine (or chicken broth) and lemon juice. Let it simmer for 3–4 minutes to reduce slightly.

  5. Stir in Parmesan cheese and chopped parsley.


🍽️ To Serve:

Spoon the creamy garlic rice onto plates and top with the lemony chicken scampi. Garnish with more parsley, cheese, or a wedge of lemon.
