For the stir fry:

2 packs instant ramen noodles (discard the seasoning packets)

2 tbsp vegetable oil (divided)

2 boneless, skinless chicken breasts (thinly sliced)

1 red bell pepper (thinly sliced)

1 cup broccoli florets

1 carrot (julienned or thinly sliced)

2 green onions (sliced)
-
2 cloves garlic (minced)

1 tsp fresh ginger (grated or minced)
For the sauce:

1/4 cup low-sodium soy sauce

2 tbsp oyster sauce (optional but recommended)

1 tbsp hoisin sauce (or substitute with more soy sauce)

1 tbsp brown sugar or honey
-
1 tsp sesame oil
-
1 tsp cornstarch mixed with 1 tbsp water (optional, for thickening)

Cook the noodles:

Boil ramen noodles (without the seasoning packets) for about 2 minutesβjust until barely cooked. Drain, rinse with cold water, and toss with a tiny bit of oil to prevent sticking.

Make the sauce:

In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, brown sugar, sesame oil, and cornstarch slurry (if using). Set aside.
