Chicken Ramen Stir Fry

Here’s a flavorful and easy Chicken Ramen Stir Fry recipe that comes together quickly perfect for weeknight dinners!

πŸ§‚ Ingredients:

For the stir fry:

  • 2 packs instant ramen noodles (discard the seasoning packets)

  • 2 tbsp vegetable oil (divided)

  • 2 boneless, skinless chicken breasts (thinly sliced)

  • Salt & pepper to taste

  • 1 red bell pepper (thinly sliced)

  • 1 cup broccoli florets

  • 1 carrot (julienned or thinly sliced)

  • 2 green onions (sliced)

  • 2 cloves garlic (minced)

  • 1 tsp fresh ginger (grated or minced)

For the sauce:

  • 1/4 cup low-sodium soy sauce

  • 2 tbsp oyster sauce (optional but recommended)

  • 1 tbsp hoisin sauce (or substitute with more soy sauce)

  • 1 tbsp brown sugar or honey

  • 1 tsp sesame oil

  • 1 tsp cornstarch mixed with 1 tbsp water (optional, for thickening)


🍳 Instructions:

  1. Cook the noodles:

    • Boil ramen noodles (without the seasoning packets) for about 2 minutesβ€”just until barely cooked. Drain, rinse with cold water, and toss with a tiny bit of oil to prevent sticking.

  2. Make the sauce:

    • In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, brown sugar, sesame oil, and cornstarch slurry (if using). Set aside.

  3. Cook the chicken:

    • Heat 1 tbsp oil in a large skillet or wok over medium-high heat.

    • Add chicken, season lightly with salt and pepper, and stir-fry until browned and cooked through (about 4–5 minutes). Remove and set aside.

  4. Stir-fry vegetables:

    • In the same pan, add another tbsp of oil.

    • Add garlic, ginger, and all vegetables (except green onions), and stir-fry for 3–4 minutes until tender-crisp.

  5. Combine everything:

    • Return the chicken to the pan.

    • Add the cooked noodles and pour the sauce over everything.

    • Toss well to combine and stir-fry for 1–2 more minutes until everything is coated and heated through.

  6. Garnish and serve:

    • Sprinkle with green onions and sesame seeds if desired. Serve hot!

  • Crushed peanuts or cashews for crunch

  • Chili flakes or sriracha for spice

  • Swap chicken for shrimp, beef, or tofu.
