🥔🧀 Cheesy Mashed Potato Puffs

Ingredients:

  • 2 cups mashed potatoes (well-seasoned, chilled works best)

  • 2 large eggs

  • 1 cup shredded cheddar cheese (or mozzarella for extra gooeyness)

  • ¼ cup grated Parmesan cheese

  • ¼ cup chopped green onions or chives

  • ½ tsp garlic powder

  • ½ tsp paprika (optional, for flavor)

  • Salt & black pepper to taste

  • ½ cup all-purpose flour

  • 1 cup breadcrumbs (panko for extra crunch)

  • Oil for frying (or spray oil if baking/air frying)


Instructions:

1. Prepare the potato mixture:

  • In a large bowl, mix together mashed potatoes, eggs, cheddar, Parmesan, green onions, garlic powder, paprika, salt, and pepper until smooth and well combined.

  • The mixture should be thick enough to hold shape. (If too soft, add 1–2 tbsp flour.)

2. Shape the puffs:

  • Scoop about 2 tbsp of the mixture and roll into small balls or ovals.

  • Place them on a tray lined with parchment paper.

3. Coat the puffs:

  • Roll each ball lightly in flour, dip into beaten egg (optional extra egg), then coat with breadcrumbs.

  • Press gently so the coating sticks well.

4. Cook the puffs:

Option 1 – Frying (crispiest):

  • Heat oil in a deep skillet to 350°F (175°C).

  • Fry potato puffs in small batches until golden brown (about 2–3 minutes).

  • Remove and drain on paper towels.

Option 2 – Baking (healthier):

  • Preheat oven to 400°F (200°C).

  • Arrange coated potato puffs on a greased or parchment-lined baking sheet.

  • Spray lightly with oil.

  • Bake for 18–20 minutes, flipping halfway, until golden and crisp.

Option 3 – Air Fryer (quick & crispy):

  • Preheat air fryer to 375°F (190°C).

  • Place puffs in a single layer, spray with oil, and air fry 12–15 minutes, shaking basket halfway.

5. Serve:

  • Enjoy hot with sour cream, ranch dip, or spicy ketchup.


✨ Tips:

  • Add cooked bacon bits or shredded chicken to make them heartier.

  • Use mozzarella cubes in the center of each puff for a melty cheese surprise!

  • They can be frozen before cooking — just fry/bake/air fry from frozen when needed.
