🧁 3 Layers of Goodness:
1️⃣ Graham Cracker Crust:

1 ½ cups graham cracker crumbs

2 tbsp granulated sugar

1/2 tsp cinnamon

6 tbsp unsalted butter, melted
2️⃣ Cheesecake Layer:

3 (8 oz) blocks cream cheese, softened

3/4 cup granulated sugar
-
1/4 cup sour cream or Greek yogurt
-
3 large eggs
-
1 ½ tsp vanilla extract
3️⃣ Apple Crisp Topping:
Apple Mixture:

2 large apples, peeled and diced (Honeycrisp or Granny Smith)

1 ½ tsp cinnamon
-
1/4 cup brown sugar
-
1 tsp lemon juice
-
1 tbsp flour or cornstarch (to thicken)
Crisp Topping:
-
1/2 cup old-fashioned oats
-
1/3 cup all-purpose flour
-
1/3 cup brown sugar
-
1/2 tsp cinnamon
-
Pinch of salt
-
1/4 cup unsalted butter, cold and cubed
🧑🍳 Instructions:
🔸 Step 1: Make the Crust

Preheat oven to 325°F (163°C). Line the bottom of a 9-inch springform pan with parchment paper and grease the sides.

Combine graham cracker crumbs, sugar, cinnamon, and melted butter.

Press into the bottom of the pan. Bake for 10 minutes, then cool slightly.
🔸 Step 2: Prepare the Cheesecake Batter

In a large bowl, beat cream cheese and sugar until smooth (no lumps).

Add sour cream, vanilla, and eggs one at a time, mixing on low speed until just combined.

Pour over cooled crust and smooth the top.

Toss diced apples with cinnamon, lemon juice, flour, and brown sugar.

In another bowl, mix oats, flour, sugar, cinnamon, salt, and butter until crumbly.

Bake for 60–70 minutes or until center is almost set. If the top is browning too fast, cover loosely with foil.

Turn off oven and crack the door open. Let cheesecake cool for 1 hour inside.

Remove and chill in fridge for at least 4 hours, preferably overnight.
