🍪 Classic Buttery Shortbread Cookies

Ingredients:

  • 1 cup (225 g) unsalted butter, softened (room temperature)

  • ½ cup (65 g) powdered sugar (for that tender, melt-in-your-mouth texture)

  • 2 cups (240 g) all-purpose flour (sifted)

  • ¼ tsp salt

  • 1 tsp vanilla extract (optional, for a hint of flavor)


Instructions:

1. Cream the butter:

  • In a mixing bowl, beat softened butter with powdered sugar until light and fluffy (about 2–3 minutes).

2. Add flavor & flour:

  • Mix in vanilla extract (if using).

  • Gradually add sifted flour and salt.

  • Mix just until dough comes together (don’t overmix).

3. Shape the cookies:

  • Form dough into a disk, wrap in plastic wrap, and chill for 30 minutes (makes rolling easier).

  • Roll dough to about ½ inch thickness on a lightly floured surface.

  • Cut into squares, rectangles, or use cookie cutters.

  • For a traditional touch, prick each cookie gently with a fork.

4. Bake:

  • Preheat oven to 325°F (160°C).

  • Place cookies on a parchment-lined baking sheet.

  • Bake for 15–18 minutes until edges are just lightly golden (not brown).

  • Let cool on the tray for 5 minutes, then transfer to a rack.

5. Serve:

  • Enjoy plain, dust with extra powdered sugar, or dip half in melted chocolate for an elegant touch.
