For the Cottage Cheese Crust

  • 1 cup cottage cheese (drained, full-fat or low-fat)

  • 2 large eggs

  • 1 cup shredded mozzarella cheese (low-moisture)

  • ½ cup almond flour (or oat flour if not keto)

  • 1 tsp garlic powder

  • ½ tsp dried oregano

  • ½ tsp salt

  • ½ tsp black pepper

For the White Pizza Sauce & Topping

  • 1 tbsp olive oil or butter

  • 3 cloves garlic, minced

  • 2 cups fresh spinach, chopped

  • ½ cup ricotta cheese (or more cottage cheese for lighter option)

  • ½ cup shredded mozzarella cheese

  • ¼ cup Parmesan cheese, grated

  • Pinch of red pepper flakes (optional)

  • Fresh basil leaves, for garnish

Step 1: Prepare the Crust

  1. Preheat your oven to 400°F (200°C). Line a baking tray with parchment paper.

  2. In a blender or food processor, add: cottage cheese, eggs, mozzarella, almond flour, garlic powder, oregano, salt, and pepper.

  3. Blend until smooth and creamy.

  4. Pour the mixture onto the lined baking tray and spread it into a thin round or rectangle, about ¼ inch thick.

  5. Bake for 20–25 minutes until golden brown and set. Remove and let cool slightly.


Step 2: Make the Garlic Spinach Topping

  1. In a skillet, heat olive oil or butter over medium heat.

  2. Add the minced garlic and sauté for 30–40 seconds until fragrant (do not burn).

  3. Toss in the chopped spinach and cook for 1–2 minutes until wilted. Remove from heat.


Step 3: Assemble the Pizza

  1. Spread the ricotta cheese evenly over the cooled crust.

  2. Add the garlic-spinach mixture on top.

  3. Sprinkle with mozzarella and Parmesan cheese.

  4. Add a pinch of red pepper flakes if you like spice.


Step 4: Bake & Finish

  1. Reduce oven temperature to 375°F (190°C).

  2. Place the pizza back in the oven and bake for 10–12 minutes, until cheese is melted, bubbly, and slightly golden.

  3. Remove from oven, let it rest for 3–4 minutes.

  4. Garnish with fresh basil leaves before slicing.
