🫐 Blueberry Cottage Cheese Breakfast Bake

📝 Ingredients:

  • 1 cup cottage cheese (full-fat or low-fat)

  • 3 large eggs

  • ½ cup milk (any kind – dairy or non-dairy like almond or oat milk)

  • ¼ cup maple syrup or honey (adjust to taste)

  • 1 tsp vanilla extract

  • ½ tsp cinnamon (optional)

  • 1 cup rolled oats (gluten-free if needed)

  • ½ tsp baking powder

  • ¼ tsp salt

  • 1 cup fresh or frozen blueberries (if frozen, don’t thaw)

  • Optional topping: extra blueberries, nuts, a sprinkle of sugar, or a drizzle of nut butter after baking


🔧 Equipment Needed:

  • 8×8 inch baking dish or similar

  • Mixing bowls

  • Whisk or spoon

  • Measuring cups/spoons

  • Blender (optional, if you want a smoother texture)


🍽️ Instructions:

Step 1: Preheat Oven

  • Preheat your oven to 375°F (190°C).

  • Lightly grease your 8×8 inch baking dish with butter, oil, or nonstick spray.


Step 2: Prepare Wet Ingredients

  • In a large bowl, combine:

    • 1 cup cottage cheese

    • 3 large eggs

    • ½ cup milk

    • ¼ cup maple syrup or honey

    • 1 tsp vanilla extract

    • ½ tsp cinnamon (if using)

  • Whisk everything together until well combined.

👉 Optional: For a smoother texture (less chunky), you can blend the cottage cheese and eggs in a blender or food processor before mixing with the other wet ingredients.


Step 3: Add Dry Ingredients

  • To the wet mixture, add:

    • 1 cup rolled oats

    • ½ tsp baking powder

    • ¼ tsp salt

  • Stir until everything is well mixed.


Step 4: Add Blueberries

  • Gently fold in 1 cup blueberries.

  • If using frozen blueberries, do not thaw – this prevents the batter from turning blue.


Step 5: Pour & Bake

  • Pour the batter into the prepared baking dish.

  • Spread it evenly with a spatula.

  • Optionally, sprinkle extra blueberries or a handful of chopped nuts on top.


Step 6: Bake

  • Bake in the preheated oven for 35–40 minutes, or until:

    • The center is set (not jiggly),

    • The top is lightly golden,

    • A toothpick inserted into the center comes out clean.


Step 7: Cool & Serve

  • Let the bake cool for at least 10–15 minutes before slicing.

  • Serve warm or at room temperature.

  • Drizzle with nut butter, yogurt, or a little extra maple syrup if desired.
