Rhubarb Cake with Butter Sauce

Here’s a classic and delicious Rhubarb Cake with Butter Sauce recipe. It’s a moist, old-fashioned dessert that balances the tartness of rhubarb with a sweet, buttery sauce poured over the top. Perfect for spring or summer gatherings!


🍰 Rhubarb Cake with Butter Sauce

✅ Ingredients:

For the Cake:

  • 2 cups diced rhubarb (fresh or frozen, if frozen – thaw and drain)

  • 1 cup granulated sugar

  • 1/2 cup brown sugar

  • 1/2 cup butter (softened)

  • 1 egg

  • 1 cup buttermilk (or sour milk*)

  • 1 tsp baking soda

  • 1 tsp vanilla extract

  • 2 cups all-purpose flour

  • 1/2 tsp salt

To make sour milk: add 1 tbsp lemon juice or vinegar to 1 cup milk, let sit 5 minutes.


For the Butter Sauce:

  • 1/2 cup butter

  • 1 cup heavy cream (or evaporated milk for a lighter version)

  • 1 cup granulated sugar

  • 1 tsp vanilla extract


🧁 Instructions:

For the Cake:

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.

  2. In a mixing bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.

  3. Add the egg, vanilla, and buttermilk. Mix well.

  4. In a separate bowl, combine flour, baking soda, and salt. Gradually add to the wet ingredients.

  5. Fold in the diced rhubarb.

  6. Pour batter into the prepared pan and spread evenly.

  7. Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.

  8. Let cool slightly before serving.


For the Butter Sauce:

  1. In a small saucepan, combine butter, sugar, and cream.

  2. Cook over medium heat, stirring constantly, until the sugar dissolves and the sauce thickens slightly (about 5–7 minutes).

  3. Remove from heat and stir in vanilla.


🍽️ To Serve:

Cut warm cake into squares and pour warm butter sauce over each serving. Add a dollop of whipped cream or vanilla ice cream if desired.
