Broccoli Chicken Cheese Casserole

Here’s a classic, creamy Broccoli Chicken Cheese Casserole recipe easy, hearty, and full of comforting flavor. Perfect for weeknight dinners or meal prep!


🥦 Broccoli Chicken Cheese Casserole

Ingredients:

  • 2–3 cups cooked chicken, shredded or cubed

  • 3 cups broccoli florets (fresh or frozen)

  • 1 cup uncooked rice (or 2 cups cooked) optional

  • 1 can (10.5 oz) cream of chicken soup (or mushroom)

  • 1/2 cup sour cream or Greek yogurt

  • 1/2 cup milk

  • 1 1/2 cups shredded cheddar cheese, divided

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • Salt & pepper to taste

  • 1/2 cup crushed Ritz crackers or breadcrumbs (optional topping)

  • 1 tbsp butter, melted (if using topping)


Instructions:

  1. Preheat Oven
    Preheat to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

  2. Cook Broccoli & Rice (if using)

    • If using fresh broccoli: steam or microwave until just tender (about 2–3 mins).

    • If using frozen: thaw and drain excess moisture.

    • Cook rice if you’re including it.

  3. Make the Sauce
    In a large bowl, whisk together cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt, and pepper. Stir in 1 cup of the shredded cheese.

  4. Combine Everything
    Add the cooked chicken, broccoli, and rice (if using) into the bowl. Stir until well coated.

  5. Assemble
    Pour mixture into prepared baking dish. Top with remaining 1/2 cup cheddar cheese.

  6. Optional Topping
    In a small bowl, mix crushed crackers or breadcrumbs with melted butter. Sprinkle over the top for crunch.

  7. Bake
    Bake uncovered for 25–30 minutes, or until hot and bubbly with golden top.


🧀 Tips & Variations:

  • Add cooked pasta instead of rice.

  • Stir in some red pepper flakes or a pinch of cayenne for a kick.

  • Swap cheese for Monterey Jack or mozzarella for a different flavor.

  • Make it healthier with low-fat dairy and reduced-sodium soup.
