🧀 One Pan Baked Zucchini Cheese
Ingredients:
3 medium zucchini, thinly sliced (with or without skin)
1 cup shredded mozzarella (or cheddar for a sharper flavor)
½ cup grated Parmesan
2 large eggs
⅓ cup milk or cream
¼ cup breadcrumbs (optional, for topping)
1 garlic clove, minced
½ tsp salt
¼ tsp black pepper
½ tsp dried oregano or Italian seasoning
1 tbsp olive oil or butter (for greasing)
Instructions:
Preheat oven to 375°F (190°C). Lightly grease a baking dish or oven-safe skillet with olive oil or butter.
Layer zucchini slices in the dish—overlapping is fine. Sprinkle with salt, pepper, and garlic.
In a bowl, whisk together eggs, milk/cream, and oregano. Stir in the mozzarella and half the Parmesan.
