Poppy seed brioche rolls

Poppy Seed Brioche Rolls slightly sweet, rich with egg and butter, and topped (or filled!) with nutty poppy seeds. Perfect for breakfast, brunch, or a cozy baking weekend.


🥐 Poppy Seed Brioche Rolls Recipe

🍽 Makes: 12 rolls

🕒 Prep Time: 20 min (plus 2 rises: ~2.5 hrs)

⏲ Bake Time: 20–25 min


✅ Ingredients:

For the Brioche Dough:

  • 3 1/4 cups (400g) all-purpose flour

  • 2 1/4 tsp (1 packet) active dry yeast

  • 1/4 cup (50g) granulated sugar

  • 1 tsp salt

  • 3 eggs

  • 1/2 cup (120ml) whole milk, lukewarm

  • 10 tbsp (140g) unsalted butter, softened and cubed

  • 1 tsp vanilla extract (optional)

For Filling (Optional):

  • 1/2 cup ground poppy seeds

  • 2 tbsp honey or sugar

  • 2 tbsp milk

  • 1 tsp lemon zest (optional)

For Topping:

  • 1 egg (for egg wash)

  • 1–2 tbsp poppy seeds


🔪 Instructions:

1. Make the Dough:

  • In a mixing bowl, combine flour, sugar, salt, and yeast.

  • Add eggs, warm milk, and vanilla. Mix until combined.

  • Knead (stand mixer with dough hook or by hand) for about 10 minutes, then add softened butter a few cubes at a time until fully incorporated.

  • Knead another 5–7 minutes until smooth, elastic, and slightly sticky.

2. First Rise:

  • Transfer dough to a greased bowl, cover with plastic wrap or a damp towel.

  • Let rise in a warm place for 1.5–2 hours, until doubled.

3. Prepare Filling (if using):

  • Combine poppy seeds, honey, milk, and lemon zest in a small pan over low heat. Simmer gently until thick and spreadable. Cool before using.

4. Shape the Rolls:

  • Punch down dough and divide into 12 equal pieces.

  • Option 1: Plain rolls – shape into balls, place on parchment-lined baking sheet or in a muffin tin.

  • Option 2: Filled rolls – flatten each piece, spoon 1 tsp of poppy filling in the center, fold and seal, then roll into balls.

5. Second Rise:

  • Cover and let rise for 45 minutes until puffy.

6. Bake:

  • Preheat oven to 350°F (175°C).

  • Brush tops with egg wash and sprinkle with poppy seeds.

  • Bake 20–25 minutes until golden brown and baked through.

  • Enjoy warm with butter, honey, or a dollop of jam.

  • Pairs beautifully with coffee or tea.

  • Can be frozen and reheated!
