🍑 Grilled Peach and Honey Mustard Dressing
📝 Ingredients
For the Grilled Peaches:

2 ripe but firm peaches, halved and pitted

1 tbsp olive oil

Pinch of sea salt (optional)
For the Honey Mustard Dressing:

2 tbsp Dijon mustard

1 ½ tbsp honey
-
1 tbsp apple cider vinegar (or lemon juice)

2 tbsp olive oil
-
Salt and pepper, to taste
🔥 Instructions
1. Grill the Peaches

Preheat a grill or grill pan over medium-high heat.

Brush the peach halves with olive oil.

Place them cut side down on the grill. Cook for 3–5 minutes, until grill marks appear and the peaches soften slightly.

Flip and grill the other side for 1–2 minutes more. Remove and let cool slightly.
2. Make the Dressing

In a small bowl, whisk together Dijon mustard, honey, and vinegar.

Slowly whisk in olive oil until smooth and emulsified.

Season with salt and pepper to taste.
3. Assemble & Serve

Serve grilled peaches warm or room temperature.

Drizzle with honey mustard dressing.

Optional: Garnish with fresh herbs (like thyme or basil), goat cheese, arugula, or crushed pistachios for a more elevated dish.
