Ingredients:

  • 2 medium zucchini, cut into sticks (like thick fries)

  • 1/2 cup grated Parmesan cheese

  • 1/2 cup panko breadcrumbs

  • 1/2 tsp garlic powder

  • 1/2 tsp Italian seasoning (optional)

  • Salt and pepper, to taste

  • 2 eggs, beaten

  • Olive oil spray or cooking spray

Instructions:

  1. Preheat Oven:

    • Preheat your oven to 425°F (220°C).

    • Line a baking sheet with parchment paper or lightly grease it. A wire rack on top helps with extra crispiness.

  2. Prepare Coating Mixture:

    • In a shallow bowl, mix together Parmesan cheese, panko breadcrumbs, garlic powder, Italian seasoning, salt, and pepper.

  3. Dip the Zucchini:

    • Dip each zucchini stick into the beaten egg, then roll it in the Parmesan breadcrumb mixture to coat.

  4. Arrange and Bake:

    • Place coated sticks on the prepared baking sheet or rack.

    • Lightly spray the tops with olive oil or cooking spray for better crispiness.

  5. Bake:

    • Bake for 20–25 minutes, flipping halfway through, until golden brown and crispy.

  6. Serve:

    • Serve warm with marinara sauce, ranch dressing, or garlic aioli for dipping.

🔄 Tips & Variations:
