Here’s a cozy, flavorful recipe for Garlic and Herb Baked Potatoes — golden, crispy on the outside and soft on the inside, infused with savory garlic and aromatic herbs. Perfect as a side dish for chicken, steak, or any comforting meal.


🥔 Garlic and Herb Baked Potatoes

Ingredients:

  • 4 medium russet or Yukon gold potatoes, scrubbed clean
  • 3 tbsp olive oil or melted butter
  • 3 cloves garlic, minced
  • 1 tsp dried rosemary
  • 1 tsp dried thyme or Italian seasoning
  • ½ tsp salt (or to taste)
  • ½ tsp black pepper
  • Optional: ¼ cup grated Parmesan cheese or fresh herbs (parsley or chives)

🔥 Instructions:

1. Preheat Oven:

  • Preheat to 400°F (200°C).
  • Line a baking sheet with parchment paper or foil.

2. Prepare Potatoes:

  • Cut potatoes into wedges, halves, or cubes — your choice!
  • Place them in a large bowl.

3. Season:

  • Mix olive oil or melted butter with minced garlic, herbs, salt, and pepper.
  • Pour over the potatoes and toss well to coat evenly.

4. Bake:

  • Spread potatoes on the prepared baking sheet in a single layer (cut side down for wedges).
  • Bake for 35–45 minutes, flipping halfway through, until golden brown and crispy outside and fork-tender inside.

5. Add Cheese (Optional):

  • In the last 5 minutes of baking, sprinkle with Parmesan cheese and return to the oven until melted and golden.

6. Finish and Serve:

  • Garnish with chopped parsley or chives for color and freshness.
  • Serve hot as a side with meats, roasted vegetables, or even eggs for brunch.

🍽️ Variations:

  • Spicy version: Add a pinch of red pepper flakes or smoked paprika.
  • Lemon zest: Add a bit of lemon zest before serving for a bright finish.
  • Loaded style: Top with sour cream, green onions, and bacon bits.
