Amazing Forgotten Chicken

Here’s a comforting, old-school recipe for Amazing Forgotten Chicken  named because you can “forget it” in the oven and come back to a perfectly tender, flavorful meal! This dish is creamy, savory, and super easy a one-pan wonder perfect for busy nights.

🍗 AMAZING FORGOTTEN CHICKEN

🔸 Serves: 4–6

🔸 Prep Time: 10 mins | Bake Time: 1.5 to 2 hours

✅ Ingredients:

  • 4–6 boneless, skinless chicken breasts (or thighs)

  • 1 cup long grain white rice (uncooked, NOT instant)

  • 1 can (10.5 oz) cream of chicken soup

  • 1 can (10.5 oz) cream of mushroom soup (or use cream of celery for variation)

  • 1 cup water or chicken broth

  • 1 packet (1 oz) dry onion soup mix (like Lipton)

  • Salt & pepper to taste

  • Optional: ½ cup sliced mushrooms or diced bell peppers

🔹 Instructions:

  1. Preheat Oven:
    Preheat to 350°F (175°C).

  2. Mix Base:
    In a bowl, stir together the cream of chicken soup, cream of mushroom soup, water (or broth), and rice. Season with a little salt and pepper if desired.

  3. Assemble the Dish:

    • Pour the rice mixture into a greased 9×13-inch baking dish.

    • Lay the raw chicken breasts on top of the mixture.

    • Sprinkle the dry onion soup mix evenly over the chicken.

  4. Bake Covered:

    • Cover the dish tightly with foil.

    • Bake for 1 hour 30 minutes to 2 hours, or until the rice is tender and the chicken is fully cooked (internal temp 165°F/74°C).

  5. Rest & Serve:

    • Let sit for 5–10 minutes before serving to allow the rice to finish absorbing the liquid.

    • Garnish with parsley if desired.

🧀 Optional Add-ons:

  • Add ½ cup shredded cheddar on top in the last 10 minutes of baking.

  • Stir in frozen peas or corn before baking for a one-pan meal.

📝 Notes:

  • Don’t lift the foil during baking — it traps steam, which is key to cooking the rice perfectly.

  • Can also be made with bone-in chicken, but increase cooking time slightly.
