🍗 GRILLED GARLIC CHICKEN WITH PEPPERS & STEAMED RICE

✅ Ingredients:
🐔 For the Garlic Chicken:

1½ lbs (680g) boneless chicken thighs or breasts

4 cloves garlic, minced
-
2 tbsp olive oil
-
1 tbsp soy sauce
-
1 tbsp lemon juice or vinegar
-
1 tsp smoked paprika (optional)

½ tsp black pepper
-
1 tsp salt
-
½ tsp chili flakes (optional)
🌶️ For the Peppers:

2–3 bell peppers (red, yellow, green), sliced
-
1 small red onion (optional), sliced
-
1 tbsp olive oil
-
Salt & pepper to taste
-
1 garlic clove, minced
🍚 For the Steamed Rice:

1½ cups long grain rice (like jasmine or basmati)
-
3 cups water
-
½ tsp salt
-
1 tsp butter or oil (optional)
🔸 Instructions:
1. Marinate the Chicken:

In a bowl, mix olive oil, garlic, soy sauce, lemon juice, and spices.

Add chicken, coat well, and marinate for at least 30 minutes (or up to 8 hours in the fridge).
2. Cook the Rice:

Rinse rice until water runs clear.

In a pot, bring 3 cups water to a boil with salt and butter/oil.

Add rice, reduce heat, cover, and simmer for 12–15 minutes or until water is absorbed.

Let rest covered for 5 minutes, then fluff with a fork.
3. Grill the Chicken:

Preheat a grill pan or outdoor grill over medium-high heat.

Grill chicken 5–7 minutes per side, or until cooked through and nicely charred.

Let rest a few minutes before slicing.
4. Sauté the Peppers:

In a skillet, heat olive oil. Add garlic and sliced peppers (and onion, if using).

Sauté on medium-high heat for 5–7 minutes, until tender-crisp and lightly caramelized.
