  • 1 lb boneless, skinless chicken breast or thighs, diced
  • 1 tbsp olive oil or sesame oil
  • 1 cup jasmine or basmati rice, uncooked
  • 1 1/2 cups chicken broth (or water + bouillon)
  • 1 1/2 cups fresh or canned pineapple, diced
  • 1/2 red bell pepper, chopped
  • 1/2 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 2–3 green onions, sliced
  • 2 tbsp soy sauce
  • 1 tbsp honey or brown sugar
  • 1 tbsp lime juice
  • 1/2 tsp ground ginger (or 1 tsp fresh grated)
  • Salt & pepper, to taste
  • Toasted sesame seeds or chopped cilantro, for garnish (optional)

1. Cook the Chicken

  • Heat oil in a large skillet or wok over medium-high heat.
  • Add diced chicken, season with salt and pepper, and sautΓ© until golden and cooked through (about 6–8 minutes). Remove and set aside.

2. SautΓ© the Veggies

  • In the same skillet, add garlic, bell peppers, and ginger. Cook for 2–3 minutes until fragrant and slightly softened.

3. Add Rice & Liquids

  • Stir in uncooked rice and let it toast for 1–2 minutes with the vegetables.
  • Add chicken broth, soy sauce, honey, lime juice, and pineapple chunks. Stir well.

4. Simmer

  • Bring everything to a boil, then reduce heat to low. Cover and simmer for 15–18 minutes, or until the rice is tender and liquid is absorbed.

5. Add Chicken Back

  • Stir the cooked chicken back into the skillet. Heat for a few minutes until everything is hot and well combined.

6. Garnish & Serve

  • Sprinkle with green onions, sesame seeds, or cilantro.
