Here’s a hearty, comforting recipe for Country Ranch Green Beans and Potatoes with Bacon — a flavorful side dish perfect for any meal, especially when you want a little smoky, creamy goodness!


🥔🥓 Country Ranch Green Beans and Potatoes with Bacon

Ingredients:

  • 1 lb baby potatoes (or small Yukon Gold), halved or quartered
  • 1 lb fresh green beans, trimmed
  • 6 slices bacon, chopped
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet (1 oz) ranch seasoning mix
  • 1/2 cup shredded cheddar cheese (optional)
  • Salt and pepper, to taste
  • 2 tbsp olive oil or butter
  • Fresh parsley for garnish (optional)

Instructions:

1. Cook the Potatoes:

  • Boil potatoes in salted water for about 10 minutes, until just tender but not falling apart. Drain and set aside.

2. Cook the Bacon:

  • In a large skillet over medium heat, cook chopped bacon until crisp. Remove bacon pieces and drain on paper towels, leaving the bacon fat in the skillet.

3. Sauté Veggies:

  • Add olive oil or butter to the skillet if needed.
  • Sauté onions and garlic in bacon fat until translucent (about 3 minutes).
  • Add green beans and cooked potatoes. Stir gently.

4. Season and Combine:

  • Sprinkle ranch seasoning over the veggies and potatoes.
  • Cook, stirring occasionally, for about 8–10 minutes, until green beans are tender but still crisp and potatoes get a little golden.
  • Season with salt and pepper to taste. Add cooked bacon back in.

5. Optional Cheese:

  • Sprinkle cheddar cheese on top, cover the skillet, and let melt for 2 minutes before serving.

6. Garnish & Serve:

  • Garnish with fresh parsley if desired. Serve warm.

Tips:

  • For extra smokiness, use smoked bacon or add a dash of smoked paprika.
  • Swap green beans for fresh asparagus or snap peas for a twist.
  • To make it keto-friendly, omit potatoes or substitute with cauliflower florets.
