  • 1 tbsp olive oil

  • 1 medium yellow onion, diced

  • 2–3 garlic cloves, minced

  • 1 cup frozen peas

  • 1 cup frozen corn (optional)

  • 2 cups cooked chicken, shredded or diced

  • 3 cups chicken broth

  • 2 cups milk (whole or 2%)

  • 8 oz uncooked pasta (bowtie, rotini, shells, or penne all work well)

  • 1 tsp dried thyme

  • 1 tsp dried parsley

  • Β½ tsp dried rosemary (optional)

  • 1–2 bay leaves

  • Salt and pepper to taste

For the Creamy Pot-Pie β€œGravy”

  • 3 tbsp unsalted butter

  • 3 tbsp all-purpose flour

  • ½–1 cup heavy cream (or half-and-half)

Optional Add-Ins

  • Β½ cup shredded cheddar or Parmesan

  • Fresh parsley for garnish

  • A pinch of paprika for color
