  • Optional: 1/4 tsp chili flakes for extra heat

  • Oil for frying (vegetable, canola, or avocado oil)

For the Spicy Mayo Drizzle:

  • 1/3 cup mayonnaise

  • 1–2 tbsp Sriracha or other hot sauce (adjust to spice level)

  • 1 tsp lemon juice or vinegar

  • 1/2 tsp honey or sugar (optional – balances heat)

  • Pinch of garlic powder or minced garlic

Step 1: Prepare the Chicken Mixture

  1. Dice the chicken finely into very small pieces (about 1/4-inch cubes) or use ground chicken. Do not use pre-cooked chicken – it needs to be raw so it binds.

    • Shredded cheese

    • Mayonnaise

    • Eggs

    • Flour

    • Garlic

Step 2: Cook the Fritters

  1. Heat 2–3 tablespoons of oil in a non-stick skillet over medium heat.

  2. Scoop the mixture using a tablespoon or small ice cream scoop and drop it into the pan. Flatten slightly with the back of the spoon to form fritters.

  3. Cook for 3–4 minutes per side, or until golden brown and the chicken is fully cooked through (internal temp should reach 165Β°F / 74Β°C).

  4. Don’t overcrowd the pan – work in batches if needed.

  5. Transfer to a paper towel-lined plate to drain excess oil.


Step 3: Make the Spicy Mayo

  1. In a small bowl, whisk together:

    • Mayonnaise

    • Sriracha (start with 1 tbsp, taste, and add more if desired)

    • Lemon juice or vinegar

    • Honey (if using)

    • Garlic powder

  2. Adjust to taste – more hot sauce for heat, more honey for balance.
